Natural pigment is extracted from the animals and plants organization and microorganism cultivation. It has many characteristics such as natural bright colour and luster, high nutritional value, avirulent, harmless and high safety. It is a good method that natural pigment was produced by microorganism to solve the problems of raw material scarce and high costs. By the way , this way also could increase yield of natural pigment. In this paper, the microorganism pigment, monascus pigment, gardenia pigment, carotenoids, melanin, indigo were introduced and summarized. Characteristics of microorganism pigment were reviewed including breeding strains , extraction method, and recommendations on a variety of the microbial pigment in the industrial production.

The extraction, spectroscopy characteristic of the pigment from apple seed shells were studied for the first time, and the effects of different factors (such as metal ions, pH, light, temperature, oxidants, reducing agents and food additives) on the stability of the pigment were also investigated. The results were as follows: The pigment was soluble in alkaline solution, insoluble or poorly soluble in nonpolar solvents. The UV-visible spectrum analysis revealed that there was an apparent absorption peak near 264 nm. The pigment solution was easily precipited when some divalent and trivalent metal ions were added. In addition, it was suitable for use in acidic and neutral conditions and could be relatively stable for light, temperature, oxidants, reducing agents and some kinds of food additives. Therefore, the pigment from apple seed shells was a kind of safe and reliable natural plant pigment.

The pigments of pitaya are natural dyes from plant with the characters of stable and wide in color gamut . The study was extracting red pigment from the pulp of pitaya to develop its comprehensive utilization .The pulp powder was prepared for extraction with freeze drying method and extracting procedure was optimized by single factor method ,and then multi-factor orthogonal test .The results showed that ,using 20% ethanol as extraction agent , the color in red solution was the brightest with the highest in absorbance . The acidity in the solution enhanced the pigment extraction ;the maximum absorbance was observed while the temperature for extraction was at 40℃ .The procedure of the optimum extraction was as extraction temperature 30℃ ,extraction time 45 min ,pH 6.5 ,and 30% ethanol concentration .The 4 factors affected extraction differently ,of which ,extraction temperature was the key factor for controlling .

Controversy on environment and food safety of transgenic products mainly focused on its containing antibiotics and herbicides-tolerant genes as selectable marker genes in recent years. Therefore, it is necessary and urgent to find safer and more efficient marker genes as alternatives. Some pigments, such as anthocyanin, synthesis in plants are controlled by anthocyanin synthesis enzymes and transcriptional regulatory factors. Some studies have demonstrated that visible color changes occurred in transformed phenotype by introducing these genes into plants. In addition, the products or intermediate products in anthocyanin biosynthesis pathway are all natural pigments which are benefitial to human health. Therefore, the genes or transcriptional regulatory factors responsible for anthocyanin biosynthesis could be used as selectable marker gene in plant transformation.
