The extraction, spectroscopy characteristic of the pigment from apple seed shells were studied for the first time, and the effects of different factors (such as metal ions, pH, light, temperature, oxidants, reducing agents and food additives) on the stability of the pigment were also investigated. The results were as follows: The pigment was soluble in alkaline solution, insoluble or poorly soluble in nonpolar solvents. The UV-visible spectrum analysis revealed that there was an apparent absorption peak near 264 nm. The pigment solution was easily precipited when some divalent and trivalent metal ions were added. In addition, it was suitable for use in acidic and neutral conditions and could be relatively stable for light, temperature, oxidants, reducing agents and some kinds of food additives. Therefore, the pigment from apple seed shells was a kind of safe and reliable natural plant pigment.
